Bean Soup

 

A tangy bean soup

Ingredients

1 cup red kidney beans

2 onions, chopped

4 tomatoes, chopped

3 garlic cloves

1/2 tsp. chili powder

1 tsp. lemon juice

1 tbsp. oil

Salt according to taste

 

For serving:
1 finely chopped tomatoes

1 sliced green onions

1 tsp. chopped coriander

Tabasco sauce according to taste

 

Method

1.Soak the beans overnight. Drain thoroughly.
2.Heat the oil, add the onions and cook for 3 minute.
3.Add the tomatoes, garlic, chili powder and salt and cook again for 3 minute.
4.Add the beans and 6 cups of water and cook in pressure cooker. Blend in a blender. Do not strain. Add the lemon juice.
5.Serve hot with tomatoes, onions, coriander and Tabasco sauce.
