Arbi Masala

Fried Colocasia cooked in a thick masala gravy

Ingredients

500 GMS. Arbi

2 chopped green chilies

75 GMS. Tomato puree

15 GMS. Ginger paste

1 tsp. Ajwain (oregano)

1 tsp. Garam masala powder

1/2 tsp. Turmeric powder

1/4 tsp. red chili powder

1/4 tsp. coriander powder

350 ml. Water

2 tbsp.Oil

Salt according to taste

For garnish :

        Chopped Coriander/Cilantro

Advice

Remember peeling of arbi can cause itching in your hands so put a little oil ( any oil) on your hands and then proceed.

Method

1.Peel, wash & slice the arbi. Now deep fry it until golden brown, drain and keep it aside.
2. Mix the tomato puree, ginger paste, green chilies, oregano, garam masala powder, all the masala powders, oil and microwave on high for 3 minutes.
3.Add water, salt and arbi (colocasia) and microwave for 8 minutes.
4.Stir and cook for 3 minutes on high until gravy becomes thick and then garnish with chopped coriander and serve hot.
