Bharva aloo
Stuffed Potato Vegetable
Ingredients
700 GMS small potatoes
ghee (clarified butter) or oil
for deep frying
For the stuffing:
100 GMS grated paneer
1 chopped green chili
1/2 tsp. chopped ginger
Salt according to taste
Prepare a mint-coriander paste
3/4 cup chopped coriander
2 tbsp. mint leaves
1 tsp. cumin seeds
2 tsp. lemon juice
6 cloves garlic
1/2 tsp. ginger
1 tsp. red chili powder
Prepare onion paste:
2 onions, cut into big pieces
1 tbsp. cashewnuts
3/4 cups water
Mix the following ingredients:
1 cup fresh curds
1 tbsp. fresh cream
1/2 tsp. sugar
1 tsp. garam masala
2 tbsp. ghee (clarified
butter) or Oil
Serve with
Serve hot with parathas.
Method
1.Peel the potatoes.
Deep fry in Ghee(clarified butter) and Scoop out the centers.
2.Mix the ingredients for the stuffing and fill the potatoes with
this mixture.
3.Now heat the Ghee(clarified butter) and fry the mint-coriander
paste for 2 minute.
4.Add the onion paste and fry again for 3 minute.
5.Add the curd mixture and fry again until the Ghee(clarified
butter) comes on top.
6.Add the potatoes with very little water and cook for a few
minutes.
7.Finally, add the cream, sugar and garam masala.
